Do you know if Humbrol do a good take on German Panzer grey?

Yes, HU 67 is a good take for Panzer Gray.

What about the later desert yellow? (I'm right in thinking that all Panzers were painted in this colour later on in the war?)

From early 1943 on, Dark Yellow was the color. But recent research shows that the color itself changed as the war went on. Humbrol no longer makes a Dark Yellow, but HU 83 Ocre, is fairly close. The desert colors changed and there was one shade in 1941 and then another in 1942.
